Falafel

INGREDIENTS

  • 400g fava beans

  • 200g chick peas

  • 100g flour

  • 1 onion

  • 2 bunches of parsley

  • 4 garlic cloves

  • 1 tsp of ground cumin

  • 1 tsp of ground white pepper

  • Canola oil


Preparation time: 1h + 12h soak

Frying time: 20 min

PREPARATION


Soak the beans and chick peas in water overnight then drain. Wash and tail the parsley, shuck the onion. Mix beans, chickpeas, onion and parsley in an electrical mixer. Put the puree in a big bowl. Peel and chop the garlic. Add it to the puree with flour, cumin and pepper. Add some salt and mix thoroughly. Use your hands to make small balls, add some water if necessary. Heat the oil in a pan and fry the balls on medium heat, turning them from time to time to obtain a golden color.
